Brine for to cure about 1 pound of salmon:
2 1/2 cups cold water
1/2 cup Kosher salt – I used Diamond Crystal brand
1/3 cup sugar

You need to defrost slower to get firmer fillets. I pull them to the top of the freezer for a day, then the coldest part of my fridge to finish defrosting.

I recall seeing a list of which grocery stores are good/bad for sashimi at the end of a different short, is that info compiled somewhere I could access? It's super cool to have a reliable source for info like that to safely and confidently eat sashimi at home, thank you for your hard work!

We use those exact Costco salmon fillets for sashimi all the time, I don’t bother with any brine, it is SO tasty with wasabi/soy sauce, it’s delicious enough for me (and our kids)!!
