For anyone still having the missing texture bug here's a solution:

Try putting the item texture into instead of "model>custom",

Then change the script of the item to:"minecraft:item/(item)" instead of "custom/(item)"

Wanted to point out a potential issue I had and just discovered: make sure the custom ID number you use is between -2, 100, 000, 000 and +2, 100, 000, 000. This is due to the memory capacity of the data type for an ID being limited to this, approximately.

i have a question, if you want your mob texture to be changed based off of the name tag, how do you do that?

For the instant mine in the give command you can just apply efficiency 10 or something on the pickaxe, helped a lot btw

Could you make a version that works in 1.19.3? They changed a bunch of stuff so now this is mostly outdated unfortunately, at least in my experience making packs :/
