If I need to load handwriting into Notion, my workflow is to take a pic of the handwritten doc and upload it to ChatGPT. It easily/accurately converts it to text, then I cut and paste to Notion. It works beautifully!

Or, you can write your initial notes in a notepad or diary and then type it out to keep track of it forever. That's how I use Notion. But you do you.
