Recently I've given a interview; the interviewer is an European. One of the questions in the interview is 'What microcontroller and microprocessor are you aware of?' - I said 8051 & 8086; He laughed at me saying "they're outdated 1980s technologies and your college still teaching them??"

Actually engineering syllabus in India mainly focuses on two things:
1) Attendance
2) Assignments(Everything hand written).
A students energy is wasted in these two things only.
No room for creativity and innovation.

My 3rd year project teacher cancelled my mini project on Li-fi technology (introduced in 2011) saying that it's too old and then forced me to choose a project based on 1920s technology 🥴

B.Tech and M.Tech syllabus needs big changes. Also coding should be taught in all branches as we see people even from branches like Mechanical enginnering end up becoming Software engineers

Engineers can become engineers only when colleges move away from written assignments & written exams and focus actually on practical work.

The reality is that we've failed to adapt to the latest technology and neither the infrastructure or labs are powerful enough to cope up with the current world. Profs are teaching stuffs from the prehistoric times and are often unaware of the modern tech scenario. Both the faculty and infrastructure should be up to date. Indians are not unemployable, they are simply outdated and underinformed than the rest of the world.
It's high time that a radical change is required by the govt where it changes the entire curriculum and focuses on bleeding edge tech and even aim for the future. Only then, we can overcome this situation.

I studied in one of the NITs. First of all, the problem starts with counseling itself. You often don't get course of your choice in the college of your choice.
Second, as you rightly pointed out is syllabus itself. The syllabus for traditional courses like civil/ mechanical is really outdated and boring.
Third is unhelpful faculty. Most of these guys are often frustrated Ph.D scholars who couldn't get any other job and decided to become a professor. Of course, not all of them. Instead of being inspirational, they often deride and mock students pressuring them to submit assignments and projects on time.
Fourth is lack of motivation on the part of our students.
Demotivation is a pretty common word for an engineering student. Most of the engineering students are a bunch of gullible, demotivated, and disillusioned students. Only a few can cope up with the pressure that a 4 year rigorous course offers. And, often they have a breakdown. They start questioning themselves, their confidence goes for a toss and the same student who was brilliant in 12th, becomes a failure. Plus, it is always in the back of your mind that you have to have a job by the end of the 7th semester.

That last line "Engineering Day abhi nikla aur maine socha ki AAP se AAP ki baat ki jaye" hits very hard. Literally tells us that everybody is becoming an engineer.
