Ingredients (makes a big batch for meal prep):
For the crispy chickpeas:
1 can chickpeas, washed and rinsed
1/4 tsp salt
1/4 tsp smoked paprika powder
1/5 tsp garlic powder
1/2 tbsp olive oil
For the hummus:
2 cans chickpeas, washed and rinsed
1/2 cup tahini
1 clove garlic (optional)
1 tsp salt
3 tbsp lemon juice
3/4 cup ice cubes
Cold water if needed
For the topping:
1/4 cup chopped parsley
For the lemon garlic oil (optional):
2 tbsp olive oil
1 clove of garlic, thinly sliced
1 tsp lemon zest
Preheat the oven to 400 F. For the crispy chickpeas, mix the chickpeas with the spices and olive oil. Transfer to a baking sheet and roast in the oven for 10 minutes until crispy.
To make the hummus super creamy, blend the chickpeas first until you have a paste-like consistency. Now add all the other ingredients and blend until the ice cubes are melted. Add more water if needed.
Spread the hummus on a plate and top with crispy chickpeas, parsley, and lemon garlic oil. Add more spices and chili if you like.
