Absolutely! You can certainly leave out the walnuts or use a type of nuts that you might not be allergic to - pecans, almonds, even hazelnuts or peanuts. Happy baking!

I just had to let everyone know that I made this cake this weekend, share it with my neighbor and she said that it was the best carrot cake that she has eaten in 75 years. And, I use a cream cream icing that was suggested for this recipe and it was the best icing that I have ever had. I could of have been happy with just eating the frosting it was so good!

Thanks for question. It is recommended to drain all of the pineapple juice from the crushed pineapple so the batter won't be too wet. You would be safe to leave a little bit in, and consider reducing the amount of oil in this recipe. Happy baking :)
