Omg this was incredible! I made it as a bundt cake and baked for 55 minutes. Covered halfway. No icing. It's moist and absolutely delicious.

Looks great--love CC! Going to try this plant-based as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy and choline and lead in eggs. Thanks so much for sharing

Tried this cake a few times. It is as good as they say it is. Only thing I change is I shred carrots, not grate (smaller holes on the grater but not the spiky ones).

The cake was amazing but I had a problem with the frosting. I followed the measurements but my mixture was very liquidy. I had to improvise by adding butter and more cream cheese but still it was not as thick.

Delicious cake. But, the frosting is extremely loose even with 1 1/4 cup extra powdered sugar it barely held together. More like the consistency of cinnamon roll icing. I’d go with the traditional icing if you want firmer frosting or you’re traveling with the cake.
