That looks so good, never had it before though. Im from Brazil and here carrot cakes are very diferent, so good but a whole new vibe. We blend the carrots into the batter so it becomes all orange and smooth, to top it of we just add a coat chocolate sauce. Goes really nice with a cup of coffee.

I grew up in Mexico eating an amazing carrot cake that had all the ingredients you used plus the ones you mentioned your mom uses. Raisins and pineapple. I loved it! We used the same recipe as long as I can remember but when I moved I lost it. Since then I have made many carrot cakes and none tastes the same unfortunately 😢. I keep praying one day I will find a recipe I’m happy with. I have to try yours for sure. Oh another thing is that we always used to eat the cake without frosting. It was more like a coffee cake. So delicious 😋

Baked this cake yesterday. Turned out Super Amazing!
Graded down the sugar, added a pincha dry ginger powder and tossed a few dates. No icing... Yum yum yummy!

You should try someday the brazilian style carrot cake! All wet ingredients go on the blender, including the carrots, and then you mix with the dry ones. After baking, it's covered with some kind of chocolate frosting: ganache, brigadeiro (a kind of fudge made out of condensed milk and chocolate powder) or the traditional cracked one made with milk, sugar, chocolate powder and some butter. It tastes like "granny's cake"!! Delicious!

My guy loves carrot cake, so I may have to make this! I’m a retired elementary teacher with a new, huge kitchen, and I love being home and in there! That and my sewing/craft room are my favorite places to be!

I absolutely love all of your videos, without question. My husband and I had to give up white sugar and white flour two years ago. I have been making your recipes with a combination of quinoa flour, coconut flour, and almond flour. For sweeter I have been substituting blue agave syrup and honey. It all translates very nicely. Thank you for all the inspiration you share with me and all of your (many) fans!
