I made this cake for my mom for Mother’s Day, and it was the best carrot cake she ever had. I’m not even that big of a fan of carrot cake, but my friends and I LOVED it! It’s so moist and soft, and the icing was so creamy and not too sweet. Amazing recipe! 10/10

an easy solution for your flour issue would be to just use grams. Which is recomended anyways in baking since it's a lot more accurate than cups

Recipe:
3 1/2 cups grated carrots
1 cup buttermilk
2 1/2 cups all purpose flour
1 cup while wheat flour
1 tbsp baking powder
1 tbsp cinamon
2 tsp ground ginger
1 3/4 tsp salt
1 tsp baking soda
1 tsp ground cloves
1 tsp allspice
1 tsp nutmeg
2 cups brown sugar
1 cup granulated sugar
4 eggs
1 tbsp vanilla extract
1 cup vegetable oil

Bake 350° F/ 180° C for 25 mins

Best carrot cake I ate in my life was in Azerbaijan. I went for 2 weeks and found a coffee house called (the house café) in Baku. OMG, still dreaming of their carrot cake. I will travel to Baku someday just to eat it again. If you go to Baku, you have to try it.

CARROT CAKE
- 2 lb carrots
- 1 cup of butter milk
- 2 1/2 cups of flour
- 1 cup whole wheat flour
- 1 tbsp baking powder
- 1 tbsp cinammon
- 2 tsp ground ginger

- 1 tsp baking soda
- 1 tsp ground cloves

FROSTING
- 8 oz butter
- 16 oz cream cheese

I've never used other liquids than eggs and oil and I've never had a dry carrot cake. I also only use baking soda and I incorporate the carrots by hand in the end. I also bake it on 190 C or 374 F for an hour (put a baking sheet over after 20 minutes). I also use lemon in my cream cheese frosting and a little salt, hands down the best frosting ever! I have no idea the measurements on the frosting because I do it by taste.
