This easy cheesecake recipe works in ANY brand of electric pressure cooker, including the #InstantPot #NinjaFoodi #Zavor #Cosori or #PowerPressureCooker.

Ingredients:
3/4 cup Ginger Snaps about 20 cookies
2 tablespoons pecans
2 tablespoons butter melted
2 8 ounce packages cream cheese at room temperature
1/2 cup granulated sugar
1/2 cup pumpkin puree
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon vanilla extract
2 large eggs
14 caramels
2 tablespoons milk
2 tablespoons chopped pecans

(Remember to plan ahead so that you have time to chill your cheesecake before serving.)

Pumpkin is such a delicate flavor that covering it with caramel sauce and nuts seems a pity. 'I'd have to be VERY tired of eating pumpkin cheesecake plain before I'd experiment with additional excitement! Guess I'm a cheesecake purist!

Yippee!!! A winner seems almost too easy, especially using the Instant Pot…the only hangup or drawback is that I would eat the whole thing…🫣
