Step by step guide to searing a steak and finishing it off in the oven. This method is great for thick steaks so we thought we'd use a 3.8 pound bone-in ribeye / Cote de Boeuf in order to walk you through this guide. It's hard to get a consistent wall to wall doneness when searing a thick steak in cast iron, so this method is an alternative (and frankly easier) way to ensure you can get a perfect medium rare all the way through your steak.
