Journeyman butcher with the ucfw here: only people with too many fingers cut bones like that. The pros use the fence and another bone to split them because our wives and girlfriends like the pointer the most

I love bone marrow and see it as a delicacy (which it is)
So mixing it in a sauce and having it sweet is something i would never think of doing
Just having it on its own is heavenly enough

You forgot to salt the water for the bones. If you do that it draws out the blood so you get a nice translucent color
