I love the way you thinly slice, salt and squeeze the onion. Takes the rawness from the onion. You are the first chef I have seen do this. I learnt this from my father many years ago and I would never add 'raw' onion to any salad! Love this omelette also!

I love this guy. I am Spanish and not offended at all that he experiments all he wants with classical dishes. I will try this kind of pizza-tortilla. Btw kuddos for pronouncing the "z" in chorizo the right way. Not easy for Anglophone speakers

Made this this morning ... and loved it! Substituted the new potatoes with sweet potatoes, and didn't put in tomatoes ... yum! My hubby, who's really picky, liked what I had cooked for breakfast, and kept stealing pieces of chorizo, LOL! Thanks, Jamie!

This was super delicious! made some small adjustments, used sweet potato instead of regular because i had none, and put in a spoon of sofrito base I had left and some dutch cheese instead of manchego. Still absolutely rocked, really great with the red onion pickle on top.
