We charred the eggplant on the top of our BBQ grill this weekend. The flavor was amazing! We added 1 tsp of red chili oil and 1 tsp tahini for a little extra heat and velvetiness. So delicious!

I think it would be best if you just roasted the garlic along side with the eggplant. This way it will be much easier to smash up the garlic and plus roasting the garlic will add even more depth of flavour to the dish.

This  is called "Begun Pora" in Bengali. We also add copped onion, chopped green chilly and chopped coriander leaves. We eat this with rice :). Although, it is a very good idea to use this as sandwich spread ... Thank you :)
