Roasted Eggplant

The best way to make Roasted Eggplant is to cut them into large pieces, then bake in the oven at a high temperature so it seals the surface, making the eggplant cubes plump and juicy on the inside, with gorgeous caramelisation on the outside.

No sad, shrivelled up eggplant around here!

Best recipe video I perhaps have ever seen. The short length is phenomenal. I love how it is less of a recipe and more of a guide. It just made the process look so incredibly easy. I'm heading straight tot he kitchen now to make this without looking back over the recipe. I LOVE! Eggplant and always wish there was more of it when I dine out. My fav grocery store had eggplant out so I bought one w/o knowing how to cook it. I found your recipe and it gave me courage to try. For my 1996 electric oven, 450 is too hot. Prob more like 400 or 425 would be better and definitely use middle of oven. My eggplant, bacon and garlic were beyond caramelized, lol. I have purchased another eggplant and will try again b/c even 'crispy' it was worth another effort! Thanks Nagi for your video!
