🌮 Everybody loves tacos but what is a taco without a great salsa? 💃 Did you know by roasting your salsa veggies before blending you'll get a deeper flavor and you'll increase the heart-healthy antioxidant lycopene in the tomatoes! It takes just 20 minutes to roast and trust me, you'll want to make a BIG batch for the week to sneak in extra flavor and veg to dishes like scrambled eggs 🍳 , tacos salad bowls 🍲 , or have as a high fiber snack with chips!



Recipe:

Ingredients:
4-6 Roma Tomatoes 🍅
1 Red Onion 🧅
1 Jalapeño 🌶️
1 Head Garlic 🧄
Salt & Pepper, to taste 🧂
2 TBS Olive Oil 🫒

1 Lime 🍋
1/4 cup Cilantro 🌿

Instructions:
1️⃣ Preheat oven to 400 degrees
2️⃣ Cut all veggies in half & place veggies on a sheet tray. Drizzle with olive oil, salt & pepper and toss to evenly coat
3️⃣ Roast the veggies in the oven for 20 minutes or until the onions & garlic are tender
4️⃣ Add all veggies to a blender along with the lime juice & cilantro. Blend to your desired consistency (I personally like it pretty chunky!)
5️⃣ Best if allow it to chill in the fridge for at least 2 hours.
