Yorkshire puddings are wonderful but I think they're better without the whole roast dinner. There's something glorious about a Yorkshire pudding filled with cumberland sausage and fried onions with a little brown sauce.

I let it rest but never use it straight from the fridge I usually warm it up to room temp in the microwave on low (so it doesn’t cook the eggs) I find whenever I put cold batter into the hot fat they never rise as much.

Easiest way to make Yorkies:
Equal parts, egg, plain flour, milk. Salt and white pepper.
Measure egg first.
They will always rise perfectly even when used straight away.
