In this video I'm making 4 no cook extreme budget meals that are easy to make and utilize the same ingredients. I'll also make a Watergate salad recipe that you may be familiar with and is perfect for potlucks or family gatherings.

👩‍🍳 CLASSIC CHICKEN SALAD SANDWICHES
FEEDS 2 - DOUBLE RECIPE FOR 4 OR MORE
1 small can chicken -drained and chopped to desired consistency
2 -3 tbs mayo
1/4 cup diced celery
1/8 cup red onion or more depending on your taste

Optional- add pickles

Mix together ingredients and place on sandwich. Can also be put on top of butter leaf lettuce for a low carb option, or placed in low carb or regular tortillas.

👩‍🍳 CLASSIC CHICKPEA SALAD SANDWICHES
FEEDS 2 - DOUBLE RECIPE FOR 4 OR MORE
1 can chickpeas drained and blended to desired consistency
2-3 tbs mayo
1/2 tsp mustard - optional
1/4 cup diced celery
1/8 cup red onion or more depending on your taste
salt and pepper

-optional add in - pickles

👩‍🍳 CURRY CHICKEN SALAD SANDWICHES
FEEDS 2 - DOUBLE RECIPE FOR 4 OR MORE
1 small can chicken drained and shredded
2 -3 tbs mayo
1/4 cup diced celery
1/8 cup red onion or more depending on your taste
1/4 diced small red delicious apple
1/2 small box of raisins
1/2- 1 tsp curry - start with 1/2 then taste it and see if you want to add more

👩‍🍳 CURRY CHICKPEA SALAD SANDWICHES
FEED 2 - DOUBE RECIPE FOR 4 OR MORE
1 can chickpeas - drained and blended to desired consistency
2 -3 tbs mayo
1/4 cup diced celery
1/8 cup red onion or more depending on your taste
1/4 diced small red delicious apple
1/2 small box of raisins
1/2- 1 tsp curry - start with 1/2 then taste it and see if you want to add more

PISTACHIO PUDDING SALAD / WATERGATE SALAD
1 box pistachio pudding
1 can pineapple - I used the rings, but some people use crushed. I like bigger chunks
1 1/2 cups marshmallows
1 tub of cool whip

optional- chopped walnuts or other kind of nuts, maraschino cherries on top, shredded coconut.

Drain pineapple and reserve liquid. I used about 3/4 of the liquid. If you like your salad less sweet you might want to skip adding in the pineapple juice and just mix it into the cool whip. Or you can add it in last and make sure to taste prior to adding it in.

Add all ingredients into mixing bowl. That's it. I put mine in freezer before serving to get nice and cold and then served in individual serving glasses topped with chopped walnuts.

1 small red delicious apple 0.82 You can use whatever is on sale.
raisins 6 pack GREAT VALUE 1.97 You will have lots left over.
4 small cans chicken WALMART GREAT VALUE 5.64 or save money by buying fresh chicken
4 cans chickpeas WALMART GREAT VALUE 3.48 - or save money by buying dried chickpeas
mayo 1.25 DOLLAR TREE
bread WALMART GREAT VALUE 1.47- I used whole wheat this time
celery 0.97
red onion 0.45 or use green onions -might cost less in your area
TOTAL 16.05

Taking the ingredients to make the curry chicken lettuce wraps with my 3yr old grandson. We will add this to his growing box of Cooking with MiMi recipes. Teaching the babies that even they can “cook” and contribute to the family meals. We spend time every visit, in the kitchen making something together and adding a card to the box. It’s a frugal gift, a transfer of knowledge and an experience for both of us.

Some great refreshing ideas here.
I'd like to share with you a budget dessert classic that we in Australia call "Jelly Whip". (What we call jelly is what you call jello). Chill a can of evaporated milk in the fridge overnight. Dissolve 2 packets of jelly/jello crystals (I like lemon or lime flavour) in 2 cups of boiling water. Set aside to cool completely, but not set. Whip evaporated milk until thick and frothy. Stir through jelly mixture and pour into a bowl. Refrigerate for 2 hours or until set completely.

This is right up my alley. I LOVE curried anything! I have been cutting down on my carbs laetey so instead of putting it on bread I'm going to put it on a grilled Keto wrap I can't waitQ! I have all those ingredients already except the apple.I had some of that pstachio marshmallow desert at church today. We were celebrating Pastors birthday. YUM! I don't know how they made theirs but I really like the idea of making it with the pineapple juice. You're such an awesome chef, so many great recipes, thank you!!!💯💜😊

Great video Michelle! I use chickpeas to help extend my tuna salads--along with other stuff like apples, grapes, nuts, pasta, etc. I also use them to add extra protein when I make salmon croquettes (what we call them in my area of TX 🤠 - salmon patties everywhere else lol). I keep chickpeas in my pantry for whatever strikes my fancy--even desserts--they're so versatile!

I ❤ Watergate Salad!! I always make it for potlucks.

Something else you can do with the raisins that's a cool summer treat is carrot salad. Mix shredded carrots, raisins, and yogurt together. It might be good with some chopped apple and/or nuts. I haven't tried it that way but now that I think about it I think I'll do that next time I make it.

Chick pea salad sammy is my go to “fast food”. It’s so delicious. I prefer the canned over dried b/c they are more firm. But I do it either way. I’m excited to try the the curry/chick peas! Such a great idea🤩

I think I’m gonna try the chickpea salad sandwiches. Instead of the mayo, my mom got some tahini sauce that resembles mayo and I think it would make it taste like hummus. And I love hummus and Brie sandwiches. Something I learned to put together when I had oral surgery and had to have only soft food. I make a curried chicken salad with Granny Smith apple, only a quarter of the apple and dried cranberries and pecans. So good. I had forgotten about Watergate salad. It’s so good. But I skip the marshmallows. But I do like nuts and coconut in it. Great treat to have instead of ice cream.

Yum! I love cold sandwiches for dinner when it’s summer. Also, either salad makes for a great filling for a stuffed tomato.

Thanks again for your easy recipes for hot summer days! I usually add a bit of curry to my egg salad as well as chickpea and chicken salad. My family also prefers dried cranberries to raisins in my chicken salad! 😊

Once again Michelle you’ve done it. I love anything I don’t have to cook or spend a lot of energy making. Curry anything is for me. Chicken salad is a favorite. The chickpea will be a definite on my list for Meatless Monday. Toast is for me. To me it adds flavor and I heard it starts to break down the gluten. I like Alvarado Street Bakery sprouted grain and Dave’s bread (any 70 cal slice) . Did you get a fan to help with the heat? 💚 enjoy your week!
