Easiest way to catch a person in a lie is to give wait 2 seconds or so after they say something. The prolonged gap between conversation will cause a liar to either restate a part of their lie or try to add more detail to it in hopes of convincing you. An honest person will know that they have been truthful and will simple wait for you to respond. However if you wait too long even an honest person will go on just to break the awkward silence.

 rapid blinking would cause the pupils to contract due to less light hitting the eye but dilated pupils also indicate lying these two techniques contradict each other, also anxiety can cause most of these reactions, anxiety does not always mean guilt, some people just dont like to be accused of something they didnt do and react in an anxious or angry manner because of the initial accusation, people are too different for this stuff to work as a general rule, its quackery!

I have a tried-and-true method for catching liars: look at their pants.
If they're on fire, he's a sure liar.

Also you can ask them to tell you about that day or time of event BACKWARDS.... Liars will have an extremely hard time coming up with something let alone backwards.

Best method I've found is to ask a question which presumes what you already suspect.  For example, you think your roommate ate all your cookies, you ask: "Do you like the chocolate chip cookies I got yesterday?"  No matter how they respond it should be pretty easy to find out whether they ate your cookies.  The trick is to make them think that you are not bothered by the suspected behavior you are trying to find out about.
