The particular boots in this video are the Meindl Burma, which has recently been replaced with the Meindl Bhutan. They're quality boots, but anything similar with good support and grip will do!

SERIOUS kit omissions - shelter / emergency bag, headtorch + spare batteries, whistle, signal mirror, duct / gorilla tape, cordage, small repair kit, multi tool, toilet kit, emergency fire kit, method to treat water. AND - leave an outdoor plan with someone in case you don't return.

We wouldn't consider it absolutely essential kit, as provided your top half is warm and dry, your legs being wet really isn't an issue unless it is winter or v cold. This vid looks at what you should have for starting walking, but you should always take note of the weather forecast wherever you are heading out, and take appropriate clothing.
