Rösti — Swiss potato cake

Recipe 2 - Potato Rösti

850g x Potatoes
30g x Melted Butter
1 Tbsp x Rosemary (Chopped)
Salt & Black Pepper
1 Tbsp x Olive Oil
30g x Butter (Diced)

1. Peel the potatoes and grate them using a box grater. Grate on the longest side of the potatoes to create the longest potato strands.

2. Place the grated potato onto a clean cloth and squeeze out as much moisture as you possibly can.

3. Place the potato into a mixing bowl with the melted butter, chopped rosemary, season with salt and pepper and mix until fully combined.

4. Place a frying pan over medium heat and add in the olive oil and diced butter. Once the butter has melted add in the potato mix. Flatten it out and neaten it up around the edges with a rubber spatula. Cook for 8 to 10 minutes until golden on the bottom.

5. Once golden brown on the bottom flip it over by placing a chopping board or plate over the pan and carefully tip it over. Place the pan back over the heat and slide the potato rösti back into the pan to cook on the other side for a further 8 to 10 minutes.
