If you like your Potato Rosti crispy and deep golden instead instead of burnt, don't skimp on the fat. If you want ultimate flavour, use clarified butter like the Swiss do instead of butter or oil - it's super easy to make your own.

And if you want ultra ultra crispy, make small thin ones instead - they are literally potato crisp crispy!

I did this today & it was super good! Crispy on the outside & soft on the inside. I didn't want to buy ghee just for this and so I heed your advice by using half butter & half oil. Really awesome! Will do it again, again & again.

I used to work at Marie Callendar’s restaurant in the 80/90’s, and they used to serve hash browns with bacon and cheese. 😋

I heard of this on a channel called Travel Beans while they were in Switzerland...I wondered what it was cuz I figured it HAS to be good! I'm going to have this as a treat, I can't eat potatoes because they affect my weight and blood sugar to much but 1 day a week I have a cheat day...I cannot wait to try this! Only difference is I would like to somehow add cheese and definitely some herbs/seasonings...yummmm!

Grate it onto a clean tea towel. Then ring out, will remove a lot more water.

Actually, the authentic Swiss Rosti, uses pre-cooked (parboiled) potatoes. That way you don't need to squeeze the water out as the starch gelatinizes as the potatoes cool in the refrigerator overnight. For the person who asked about adding cheese, you put in half the potato mix and then put in the grated cheese, then put in the rest of the potato mix so the cheese is on the inside of the pancake.

I like it but I think I prefer bubble and squeak. Not as glamorous but sticks together better.
