Simple potato rosti recipe | Swiss potato pancakes

The potato rosti is an absolute delight to eat. They are crispy, buttery and supremely savoury. they go perfect with a brace of eggs, and some crispy bacon, to make a memorable breakfast.

If you feel a bit put of making a rosti, because you might think it's difficult, I urge you to give them a go, because actually they're really easy to make. The secret to a good rosti, is lots of little steps done well, and by that i mean making sure you have the right potato, you extract all the excess water from them, you cook at the right temperature and you don't flip them too soon.

For this recipe I used some desiree potatoes that i had left over from the previous video. Any good roasting variety would be fine for this such as King Edward, maris piper or russet potatoes.

I also used some duck fat to fry my potato rosti as it gives a pleasing savoury flavour to them. You can use whatever fat you like though. I also finished them off with a knob of butter just to enhance the already sumptuous flavours.

When you're frying them, make sure you develop a nice crust before flipping,because if you do it too early, they will fall apart and you'll have more of a potato porridge than a nice crisp rosti.

You can also freeze these ahead of time too. Simple place dollops of the mixture on a baking sheet and press lightly into the shape you desire. Then stick them in the freezer and they can be cooked from frozen. just bare in mind that you may need to adjust the cooking time if they are frozen.

To make my potato rosti you will need:
►700g of potatoes (king edward, maris piper, desiree or russet)
►2 spring onions (scallions)
►1 tsp of dried sage
►1 tsp of salt (adjust to taste)
►1 tsp of pepper (adjust to taste)
►2-3 tbsp of duck or goose fat
►A medium sized knob of butter
Serve with fried eggs and bacon, or whatever you like really

Adam can you or keef sort out potato pancakes recipe ? We used to buy them from Sayers or rathbones cake shops and they where as big as dinner plates and grilled then and slathered with butter cut into 1/8ths omg hot and delish 😃
