I did an apprenticeship and the college part of it was brilliant, talented chefs who wanted to teach the next generation. Not only that but I got to go out into the industry and learn from established chefs in real time.

Make sure you get PAID YOUR VALUE. Don’t let arrogant chefs exploit your passion. If you stage, do it only for a shift or two.

I went to cooking school and it was the best decision I ever made. I had much more technical knowledge from my formal training than my CDP as a young Commis. You can’t teach the experience I got in the kitchens though. Different folk different strokes.

Don't go to cooking school. Agree. My first year at cooking school was boring until i got a job at a Tapas restaurant and i learned much more there in a month than a year at cooking school

I learned so much in my first year in catering school, we had to have work expieriemce to get in, we did six months college and then another 6 placement,
2nd year wasnt so hot

On the “Don’t go to chef school” it works for some and not all. I did it for the qualifications and the doors the name of the school opens up. But nothing replaces passion and drive because your piece of paper is useless if you’re shit on the line during service.

Hahah I don't wanna knock on people who went to culinary school, but they always come in with this attitude that they know more than you. You try to teach them how to cook the dishes and plate them and they start to say how it should be done differently and all that bullcrap.... then when it gets busy they get exposed. Same goes for the "I've been an executive chef or sous chef or I've been cooking for 20 years" people.... just be humble and learn. The more you talk about how good you are the more we laugh at you when you can't hang
