Oven 350:
1 and 1/3 cups Blanched Almond flour
1/3 cup unsweetened coco powder
2/3 cup Swerve confectioner
1 Teaspoon baking soda
1 Teaspoon baking powder
Pinch salt
3 eggs room temperature
1 Teaspoon Vanilla extract
1/4 cup Almond milk
Unsweetened almond milk
2 1/2 tables spoons melted coconut oil
25 minutes cook
Frosting:
2 soften sticks of butter
Less than a cup Swerve 125 grams
Unsweeten Coco powder 80 grams
1/2 almond milk

Just made this recipe today and it came out outstanding and my husband and mother in law loved it! Hubby’s new to keto so I was nervous if it would come close to his fav chocolate cake. The frosting took it over the top. Thank you! PS made one addition to cake recipe and added 1/3 cup sour cream to make it bit softer. 🤓

I was skeptical at first, then I made this cake. OMG, this is one of the best chocolate cakes I have had in years. So moist, rich, utterly delightful. My version was a little eggy, which I did not mind at all, and instead of all that much sweetener in the frosting, I used a tiny bit of rose oil essence. Amazing! Thank you SO much!

Lol i totally forgot to add 3 eggs but 2 eggs worked absolutely fine. The cake is a little bitter in taste you won't notice while eating, its after you swallow it. But i love this recipe and its healthy and i love it. Thank you Duff. I made this cake and I love it. <3

Great cake. One tip: 3:35 use mixer again to mix the ingredients for the frosting, don't use just spatula, because the mixture won't be as creamy.

So this recipe is absolutely amazing; however, as a baker who has moved to Keto, I’d like to share a couple of points. When making the batter, use a hand mixer or stand mixer to blend. Because almond flour is heavier than flour, let your beaters run for about 45 seconds to incorporate air into the batter. This will make the cake less dense and rose better. Also, you really should never hand mix your butter cream frosting, as you will never get air into it either. This is why the icing in the video is so dark and grainy. I cream my butter with the mixer, then add the remaining ingredients. I then use the mixer to slowly cream the frosting for about 15 minutes. The frosting will double in volume and have a creamier texture. Just some tips to make this more delicious. Also, if your cake comes out dry, you can make a simple syrup by simmering water and swerve in a small pan. Lightly spray or pour the simple syrup on the cake and let it absorb. This will moisten the cake; however, do not over spray or pour, as the crumb could collapse. I use 1/2 c. Swerve to 1/2 cup water and split it between layers. I put the first layer on the serving dish, add my simple syrup, then frosting, then I add the second layer, spray with syrup and then frost the entire cake. So delicious. Thanks for this recipe.

😊 My notes: Oven @ 350°
Eggs & butter on counter (room temp) & melt coconut oil
198 grams (1 3/4 c) blanched almond flour
25 grams (1/3 c) unsweetened cocoa powder
100 grams (2/3 c) Confectioners Swerve
1 tsp baking soda
1 tsp baking powder
pinch of salt
Wisk dry ingredients until combined

Add:
3 eggs at room temperature
75 ml (or a heaping 1/4 c) unsweetened vanilla almond milk
35 grams (2 1/2 Tbsp) melted coconut oil 
1 tsp vanilla extract
With a spatula mix wet and dry ingredients.
Mix until a thick batter forms.
7 inch springform pan
Coat pan with baking spray
Add keto cake batter to the pan
Evenly spread the batter
Bake middle rack for 20 - 25 minutes

BUTTERCREAM FROSTING:
2 sticks of butter (softened to room temp)
Cream butter with hand mixer
125 grams (< 1 cup) Confectioners Swerve
80 grams (1 c) unsweetened cocoa powder
120 grams (1/2 cup) unsweetened vanilla almond milk

Allow cake to completely cool before removing from pan and turning over on a plate.

1/16 of a serving = 1.5 net carbs ❤

I made this batter and then made a cream cheese, butter, heavy whipping cream and cool whip icing. I turned mine into valentine's cupcakes and they're pretty great! Not the best keto cake recipe but close. I've had one with avocado in it and that actually keeps the cake moist. Thanks for the recipe tho!

I just made this and it is amazing! Even my 15yr old daughter said.. omg is it weird that i le this better then normal cake? I am not generally a but attempting to live a different life style for not just me but my family has encouraged me to get creative. Thanks for the recipe.
