Yogurt Almond Cake is an extremely easy to make cake that is moist and delicious—perfect for brunch or afternoon tea! 😋

INGREDIENTS
¾ cup (210g) plain Greek yogurt
3 large eggs at room temperature
1 teaspoon (4mL) vanilla extract
⅓ cup + 1 tablespoon (83g) melted coconut oil or butter
2 cups (200g) blanched almond flour
⅓ cup (65g) granulated erythritol
2 teaspoons (8g) baking powder
¼ teaspoon (1g) salt

Bake at 350°F(180°C) for 40-50mins

I am borderline diabetic and keto, husband is insulin-dependent and refuses to try anything keto. So last week, I decided to make this cake. He said, you haven't put anything "funny" in it. I said, no, I didn't put anything "funny" in it. Over the course of the week, he ate more than half of it, he absolutely loved it! I think we've cracked it!! LOL!

This is insanely delicious- I used this as base to make 6 chocolate muffins and 6 lemon and blueberry muffins. Absolute heaven! For the first time it feels like a Keto lifestyle can be sustainable long term. This will now be my Sunday treat 😋👏🏽👏🏽

My wife is in her 3rd trimester and has GD, she was having a serious sweets craving so I felt like I had to deliver! I whipped this up real quick, added some almond extract for extra flavor. It turned out great and she was a happy pregnant lady!!

You know what I love? Well, first of all, the production of your videos is impeccable. Second of all, you keep it short and sweet. ANYONE can follow this. You put ingredients in cups and grams 👌 the music is very nice & soothing, not loud or an annoying tune..I also love hearing the sounds of the original recording, it's like a slight asmr 0:04 the sound of that slice falling 😍 the sound of the spoon, the bowls touching other surfaces, the mixing 00:36. You even put the ingredients in Spanish! Wow! Amazing! I'm from Mexico but for some reason, I tend to look for resources in English. So, again, thank you for the simplicity. It's so elegant and quite a delight to watch😍👏👏👏 Subscribed and def recommending your channel.

OMGOSH! I made this yesterday! Everyone! Listen! It’s SOOOO easy and SOOOO delicious! I’m not a yogurt girl, but being Keto and a fan of fat, I substituted Creme Fraiche for the yogurt (creme fraiche is a luxuriously thick, rich cream (with a slight tang) that is used as a finishing touch for sauces or soups, or spooned over berries or desserts!) WOW. WOW. WOW. I did everything as our beautiful chef instructed, except that I added 1/3 tsp. of Almond extract, in addition to the Vanilla, and sprinkled the top with powdered Bocha Sweet as soon as it came out of the oven— and again after it had cooled! Ketoserts: You are a lovely genius! Thank you so much!! ❤️😀❤️

I made this last night - it's aaa-mazing. It was my first time using Lakanto Monkfruit Sweetener Golden. In addition to vanilla extract, I did add 1/2 teaspoon of almond extract. This cake would be a good base for strawberry shortcake. By the way, I don't even do Keto, but loved this cake.

Ive used your recipe twice and for the second one added lemon juice and zest to the mixture for a lemon version. Both are super delicious! Thank you 😊

Made this cake with 2 lemons and zest. Also 1 teaspoon of poppy seeds.I increased the flour by 1/2 cup. I baked in my convection oven at 325° for 45 minutes. Thanks so much for the recipe!

I found this recipe while searching for a recipe to use the remainder of my yogurt before it expired. The directions were simple and easy to follow. I added a few extras for added flavour (Flaxseed, Chia, Rosewater & Chopped Pecans). I love this base and saved it to my low carb recipe list on YouTube for reference. Thanks!
