Homemade Barbecue Potato Chips
An easy recipe for super crunchy barbecue potato chips starts with 2-3 russet potatoes.
Russets are the best with their high starch content.
Peel and slice your potatoes, we used a mandolin for consistent size, but you can hand slice as well.
Soak in cold water with salt and vinegar and let set for about 15 minutes.
Drain the water and lay out the chips on a paper towel or kitchen towel to dry. Pat the potatoes to dry well.
Blanching the potatoes is a 2 step cooking process. First, fry the potatoes in 300 degree oil until they float to the surface.
Fry the potatoes in batches, we use about 15 potatoes for each batch. This will keep them from sticking together.
After all of the potatoes have been blanched, increase oil to 350 degree.
Drop each batch in hot oil until the are browned and crisp.
Toss with barbecue seasoning.
Our barbecue seasoning recipe-
Ingredients:
2 TBSP- brown sugar
2 tsp- smoked paprika
1 tsp- garlic powder
1/4 tsp cayenne pepper
as needed- sea salt
Method:
Combine all ingredients in a food processor and blend until a fine powder, this will help the seasoning stick to the chips better.
