► Potato Chips Recipe
2-3 large starchy potatoes (e.g. Russet; mehligkochend)
washed well
sliced evenly; 0,5-2mm worked for me
rinsed very well
dried thoroughly on kitchen towel
added to 1l room temp cooking oil
cook on medium heat, 30+ minutes
remove first chips as they cook and turn a light brown
cook rest until done
salt to taste, toss
let cool completely (!)
store in zip lock bag

My tip: Submerge the sliced potatoes in very cold (ice cold) water to speed up the excess starch removal. To dry use a salad spinner thoroughly.
