Here’s a Vietnamese egg coffee recipe because I couldn’t get enough of that creamy egg foam after my Vietnam trip. Who else loves this drink?

Egg Coffee (Cà Phê Trứng) Recipe:

1. Separate 2 large egg yolks.
2. Add 2 tbsp sweetened condensed milk or substitute with sugar.
3. Blend until light, airy and pale yellow
4. Enjoy hot or iced! Top the egg foam over freshly brewed Vietnamese coffee or dark roast coffee with a dusting of cocoa powder.

Sugar gently cooks eggs making it safer than it seems to eat. This is also another French technique that I didn’t expect to be created in Vietnamese cooking!

Warning, do not do this if you live in a country a risk of salmonella. I really wish creators would mention risks with raw eggs instead of letting uninformed people get sick.
