Great to show off this fun option for dumplings - I know it's popular in Japan. I did want to comment that all the gyoza I've gotten have had raw ingredients. They are not pre-cooked and you do want to make sure they are thoroughly heated (though it doesn't take long in the small amount).

Fun fact: in japanese these are referred to as "hanetsuki gyoza", or gyoza (dumplings) with wings.

Gluten free home here! (mom and little bro have Celiac) - this totally works with just plain ol water and cornstarch as well, or corn flour for our friends across the pond. Frankly ive never even thought to use stock instead of just water, but I'm excited to try it next time I make some :D

I get these gyoza from ALDI(always the prawn ones) and will steam a few with some little bok choy to add to my noodles.
