a tip from across the pond. boil the fries first until for 8 minutes or so, then fry them. crispiest chips/fries in your life

Just microwave the potatoes first and let them cool for a few minutes. Cut into wedges and fry until crisp.

I am a processing supervisor at the #1 fry company in the world. Just about everything this man said was correct, however you only need to blanch at 162 degrees if their pre cut. The blanch releases sugar from the potato and allows your product, after the fryer, to have a nice light color instead of something dark. Longer time in blancher process = texture issues like the gelatinized potatoes he talked about… and lighter color.

Fry joint I worked at in high school had a three stage fry using Idaho Russets and cook in canola oil.
1. 325 until the edges blister a bit, fluffy inside.
Let it sit for 15 minutes.
2. Then 340 until they make that sound when you shake um, just slight colour on edges.
3. Then straight into final fry at 350 until desirably coloured… like 45 secs on this last one.

Just add cornstarch after washing chopped potatoes and deep fry it will be crispier

If your potatoes are green like that - you need to use a potato peeler to peel off all the green or you will get a stomach ache.

So if I were to Open a diner, I could Just fry of a ton of fries in the beginning of the month at 275, freeze them and finish them whenever I Need? Or is there kind of a time limit to freezing them?
