Boiling with salt and baking soda instead of just sitting in ice water will break down the pectin in the potato which will actually allow it to crisp up in the oven

I JUST made these and they were DELICIOUS! The only differences from mine was different seasonings and after you flip the wedges, I baked them for 25 mins instead of 20. So delicious and crispy!

This is how my dear Mum made her chips always. She cut washed and dried them thoroughly in a clean tea towel before shallow frying in dripping. Served with fish and salad. So beautiful.

I think it looks amazing but since you’re baking at 450 shouldn’t it be lite olive oil?

MY husband used to make these & he did as you said, however, I have no dentures for my mouth, so somewhat soggy is easier for me to eat!

You know you're probably saving time and mess by doing it that way as opposed to frying it the old-fashioned way. Plus, it's also probably healthier for you. By the way, that short video was really well produced even with the boo boo. Love your program and love your blog. Have a blessed day.

Don't add the salt until the end! Salt draws out moisture, giving you soggy potatoes. This goes with all potatoes when baking them, salt once they're done

If you rinse the freshly cut wedges in cold water then par boil for 2 mins, plunge into cold water immediately after, then follow the instructions for drying and cooking as you've said, you can eliminate the 30 mins ice water wait. 😉

Salad spinner to dry off rinsed potatoes. Magic. Convection bake. Double magic. Tossed with olive oil, salt, seasoning, and almond flour. Triple magic. Mmm... Potatoes... 🤤
