Feels really good to know there are some people noticing the simple things in Mexican culinary culture.
As a Mexican, I’d like to thank you for supporting this Tom.

Cheers!

OK Chef Tom. How can I not make this after watching your video. Pinto beans are rare here in the UK but I found some on line. Two day wait. There are lots of recipes for these beans, but yours is the only one that actually talks to me. I will take an inventory of the dry chili's I have in the stash but I have a feeling that I have all of the ingredients on hand. At the supermarket this morning I found a big package of 'cooking' bacon. It seams to be the bits and ends that they have left over after packaging the good stuff. I have used it before and it is delicious. It is about half the price of regular bacon so I will fry up a bunch for bacon fat and put a couple of slices in the bean stock. Thank you very much for sharing this! Old El Paso tinned refried beans are £1.79 ($2.25 US) at the store. They are not very good and put most people off refried beans. I really respect your method. You start with a strong idea of what you want the end product to taste like and what texture and colour you want. Then you find ways to get there. Very rare on youtube.

OK. I admit that I used a kilo instead of a pound of beans. I doubled up the ingredients in the bean stock. I ditched the bacon fat idea as it was not practical and went with lard. I fried in 2 batches, both with just salt as I wanted a benign side dish to serve with hotter Mexican mains. I put the first batch on the side and went out for a smoke. When I returned, a third of it was missing. My wife ate it when I wasn't looking. She hates refried beans. The fact that she would steal these is an indication of how good they are. For the second batch, I throttled back slightly on the garlic. By this point I was really hungry so I did what you did. I put some on a wrap and added some grated cheddar. It was perfect with a couple of drops of hot sauce. Batch 1 was gone in a couple of hours. Batch 2 is safe in the freezer (for now). Thanks again!

I didn't enjoy legumes when I was younger, but after coming across various dishes in which there are used well I can really appreciate them now. Refrieds being one of my favorites and this looks like a great recipe..
'Kid me' wouldn't believe that I would be saying this years later, but I'm looking forward to making this myself. Thank you!

Every time you say bean stock I think "bean stalk". I loves me some refried beans. Pintos are my go to beans for dishes that require beans. P.S. More dessert pizzas, lol.

Tom. I love everything you do and have been watching you for years. Ancho chiles are for enchiladas and have no place in a Mexican refried bean. ALTHOUGH it sounds delicious.

I like refried beans. That's why I wanna try fried beans, because maybe they're just as good and we're just wasting time. You don't have to fry them again after all.

nothing like a few bean & cheese! Ive been cooking my beans with smoked ham hocks the past couple years. I also noticed that at our HEB a guy can buy boneless smoked ham hocks for less than bone in and even wind up with meat in place of the bone weight! That means more hocks for the beans! Pico DeGillo... Dont get it in your Eye-O... Unless you want to Cry-O
