One valuable thing I have learned in this series is that cooking is not to follow rigid recipes but to improvise with what you got. I haven't done any Frankie's recipe yet (because I live in Asia, indigents vary) but the way of thinking has helped me finish several dishes I wouldn't image in the past, and of course under a 2 $ budget.XD

Meal Prep Ingredients & Meals
Shopping meal prepping $148 - Frankie - Struggle Meals

Pasta - spaghetti
Fresh fruit - apples, bananas, lemons (2), Raspberries or strawberries (for oats?)
Yogurt plain
Sweet Potatoes
Lettuce (romaine, iceberg)
Fresh veggies - onions (white & red), bell peppers (6+), broccoli, cauliflour, carrots, tomato, cucumber, cherry tomatoes, cabbage for slaw, celery
Dried beans
Bananas
Rolled Oats
Cheese - cheddar slices & shaved, taco
Canned tomatoes for chili (?)
Peanut butter (sunflower)
Milk - almond or soy suggested (for overnight oats)
Eggs - 12 - egg salad & binder
Stock (goes with brisket)
Rice
Cinnamon, sugar, brown sugar
Bread - hamburger Buns, sandwich bread, italian/baguette, breadcrumbs, tortilla
Meat - Ground beef, brisket, chicken tighes
sour cream
Barley
Mayo
Olive oil
Salt, pepper

BREAKFAST
Banana muffins with apple slices (Tues, Thr, Sat)
Overnight oats with fruit (Mon, Wed, Fri)
French toast (Sun)

LUNCH
Brisket sandwich with slaw sandwich (Mon)
Egg salad sandwich, lettuce on bread (Tues)
Veggie burger leftover chili & rice on hamburger bun with lettuce, tomatoe (Wed)
Barley Grain bowl with hard boiled egg, onion, veggies (Thr)
Chicken salad sandwich, cheese, tomato slice (Fri)
Panzanella salad with basil (Sat)

DINNER
Chili (Mon)
Fajitas - leftover brisket & rice, onions, peppers (Tues)
Roasted chicken thighes, sweet potato, broccoli, onion (Wed)
Barley cheese cauliflour bake casserole (Thr)
Spaghetti dinner with garlic bread (Fri)
Stuffed peppers melted cheese leftover bake with romaine salad w/ cherry tomatoes (Sat)
Brisket over carrots/onions/stock/sweet potato (Sun)

Sunday prep - make brisket, prep oats, make beans (2 containers), make rice, harboil eggs, muffins

Wednesday prep - sheet pan chicken dish, cauliflour, barley

I've made stuffed peppers before. The trick I find is par cooking them in the oven brushed with a little oil and herbs then stuffing them and finishing cooking. Sometimes the filling can hinder the underside of the pepper from cooking properly.

I use mozzarella or feta something easily melted and a bit of cheddar, and pre fried mushrooms, tuna from a can and spring onions.

I recently suffered a heart failure. After returning from the hospital, I was put on a low sodium diet. In measurement, that is no more than 2000 mg in 1 day. They I am throwing down the gauntlet and challenging you to figure out a week's worth of meals that would fit into a low sodium diet.
