Ingredients:
115g melted unsalted butter
130g light brown sugar
120g granulated sugar
1 large egg
1tsp vanilla extract
220g plain flour
½tsp bicarbonate of soda
1tsp salt
100g white chocolate chips
50g fresh or frozen raspberries

1) Preheat your oven to 180°C/ Gas Mark 4/ 160°C (fan)

2) Whisk together the butter and both sugars to form a paste.

3) Add the egg and vanilla and ehisk until smooth.

4) Fold in the flour, bicarbonate of soda and salt until just combined.

5) Fold in the chocolate chips and raspberries.

6) Scoop the dough into 1tbsp balls and place them on a cookie sheet.

7) Bake for 9-10 minutes until the edges are golden brown and the middle looks puffy.

8) Whilst they are hot, use something round to shape the cookies into circles.

9) Allow them to cool.

10) Enjoy!

Made these and they were great, my daughter and her mates loved them, I froze the rest of the dough balls, you can then cook them from frozen

OK I need bakers advice, once I made the perfect soft cookies but I can't remember how. Once removed from the oven you're supposed to leave in the tray for 5 mins so the steam reabsorbs into the cookie so it's soft, if u want it crunchy ur supposed to remove right away and place on a cooling rack so the air can harden the bottom. Now is this all something I dreamed up or is it accurate? And also remove from oven earlier than u think so it remains soft? I can't find answer on Google it's too much info
