welcome back to cookie science! today we are comparing using no eggs and double eggs! eggs are very important in cookies and make a huge difference.

as always, for this series i am using nestle tollhouse as the base recipe!

For no egg cookies people usually add what is called the "vegetarian egg" which is ground flax seed or chia seed
But most of the recipes I've seen on yt use a bit of milk to add that moisture to the eggs
Edit: for those of u telling me that vegetarians eat eggs, please search up whether all countries consider eggs as a vegetarian food
I grew up in India and here we consider eggs as meat
Here's a snippet from an article explaining this"Note that while eggs are vegetarian, they are certainly, under no circumstances, considered vegan. However, in some parts of the world, particularly in India, eggs are indeed considered to be meat, and some vegetarians will not eat them."

Cookies without eggs is exactly how they're made in Europe. I remember being astonished when i first encountered an American cookie recipe and there was eggs in it.

The double eggs are what my grandma's cookies looked like! I never got the "grandma's cookies are the best" thing, my dad spent 4 years perfecting his cookie recipe and they're really amazing

The no-egg cookies is the kind we had in Europe before internet recipes taught us how to make American cookies. Dry and very bisquit-y. Whenever someone in class whose mom/family were from the US and they brought American soft cookies for their birthday, we were wild with excitement. We would all do the wildest things for the birthday kid just for a 2nd cookie hahahaha

I lost my mom’s old recipe, and I was missing the cake-like effect when my partner makes a random recipe. He is also interested in having a more cake-y type ccc.

Now we know what to do about it!

One of my fave cookie recipe has one add egg yolk without its white, and the result is very nice and chewy. Could you do an experiment with whites and yolks proportions?

I would just like to add that no-egg-cookie-dough is great. Make it with heat treated flour, and you can skip the baking part altogether, which is great for people like me who want to eat it asap.

What about egg white (only) / egg yolk only / some kind of mix of the two, e.g. 2 egg whites and 1 yolk. I've often seen different combinations of eggs in cookie recipes & always wondered how it would change the taste!

I'd love to see the difference between using yoke and egg white. Like, cookies with only yoke and cookies with only white, but the same amount of liquid.
