Beef Pho Recipe
(Because bones and beef scraps will vary in weight, size and consistency. Don't worry about being exact with measurements and use the video as a guide.)
300 g (0.66 lbs) Sirloin
3 Leg Bones
3 Full Short Ribs
250 g (0.5 lbs) Beef Scraps
2 Cooking Onions
1 Cup Ginger
3 Green Onions
4 Star Anise
1/2 Tsp Whole Cloves
1 Cinnamon Stick
1 Tsp Coriander Seeds
3 L (101 Oz) Cold Water
3 Tbsp Kosher Salt
1 Tbsp Fish Sauce
1 Tbsp Sugar
200 g ( 0.4 lbs) Rice Noodles
200 g ( 0.4 lbs) Sirloin (Or other raw beef)
1 Cup Bean Sprouts
2 Green Onions

Impressive! I've cooked Pho for years. After par-boil I usually turn on high heat for about an hour to completely get rid of the remaining scum then low heat for about 4 hours, no cover. To bring it to the next level I usually throw in a small hen (one usually sold for making broth) . BTW, don't they sell fresh Pho noodle where you live? Here in Boston you can get fresh (frozen) noodle package at the Asian market.

Genuine question, does getting rid of cloudiness/scum do anything for flavor or is it purely aesthetic? I've never bothered, especially as I make pho in a pressure cooker and don't have access to it but i've always wondered.
