In this video I’m sharing with you some of my favourite quick and easy vegetarian recipes to meal prep! These are both low food waste recipes as I like to use everything I buy especially if you’re cooking for just one or two people. I get about 7-8 meals total from these 2 vegetarian lunch or dinner ideas, and they're the perfect meal prep recipes for beginners.

I love how most stir fry recipes (with vegetables) are versatile to where you can use whatever ingredients you want! I can't say I have an immense interest in tofu, but one ingredient that's honestly easier than what you made for the sauce is to just douse all the veggies in olive oil. It works well and isn't too complicated- plus, it's diabetes friendly :)

These ingredients would also be great in vegetable stock with various Asian noodles and some soy sauce.

One of my favorite veggie recipes is a Martha Stewart lentil stew (if she mentions ham/bacon, it’s skippable) made with organic green lentils, onions and carrots. It’s great on its own with bread, but then makes great leftovers as a topping for potatoes or mixed in with pasta.

I love food/meal preping!i sometimes even put things in the freezer and then it gives me easy access for longer..i do miss soup, we have 40oC here so it'll be a while before i can actually make and eat one😅

These looks delicious! A veggie stir-fry is my go-to one person meal as well 😊 I'm curious, do you make a fresh serving of some sort of "starch" (rice, noodles, couscous, quinoa, etc.) when it comes time to eat your prepped stir-fry, or do you prefer to just eat it as is?

Do you add rice when you serve the stir fry? I prefer-to store my meal prep in individual sized containers.
