Recipe from Chinese Cooking demystified:
Cantonese scrambled eggs
5 eggs separated
1/2 tsp salt
1/2 tsp sugar
1/8 tsp white pepper
1/8 tsp msg or chicken bouillon powder
1/2 tsp Shaoxing wine
1 tsp cornstarch mixed with 1 tbsp water
1 tsp sesame oil or lard
1 1/2 tbsp of lard or butter for cooking

Very true. Most people and restaurants in the US over cook eggs. too dry imo. Those look amazing tho might have to try these out 👍
