That’s a damn good recipe. A good tip is to use a bit less oil and brown the meat at a higher temp if you can’t get the fond, the brown stuff at the bottom of the pot before he adds the onion. That fond has a ton of flavor, but some pans don’t make fond well, so you can brown the meat more to compensate. Use a wooden spatula or spoon to scrape it up once the onions have cooked a bit.

I also like to add my seasonings to the pepper mixture :)

Kudos for leaving out beans and using whole dried red chile! Beans are a side. Pete that has some great deep color. Too much tomato product for my taste but that is the beauty of cooking. These days I cut my chuck into large chunks and smoke for an hour or so til theres some bark then chop it up onto smaller chunks and add to my base. Yours does look good. Nice job.

I love you dude! Every cook on here on the interwebs that says whatever and whatnot in any recipe. You says the magic word of cooking "leave for 3 hours". Good food gets good time. Even has the right pronunciation for wash-your-sister-sauce :-D

I suggest using V8 juice instead of tomato sauce. I did this once and wow.
Just adding more flavor to the menu 😋

That looks great BUT I would have liked to have seen you brown off about 1.5 lbs of ground chuck to make it meatier.
I do a lot of deer chili using deer chunks and ground beef mixture. Gives a good meaty chunky texture
