I am from Bologna, we invented Bolognese sauce, which just call it ragu in Bologna. Gennaro is right, this is a modern way to make ragu, and very delicious. My grandma used to make it old style, only beef and pancetta, and always tagliatelle, never ever ever ever spaghetti. I moved from Italy 20 years ago, so now I am used eating bolognese sauce in every possible way, I have even tried with rabbit meat, also nice. It's like pizza now, too many variations, and many of them are very good and delicious. Just enjoy the fucking food.

For anyone wondering why so many italians are bitching about his bolognese recipe. Every italian village has their own recipe and everyone thinks their recipe is the best and others are garbgage. Source: I live next to the Italian border.

I've tried many many many bolognese recipes including Gordon Ramsay's and Jamie Oliver's, but this one is the best so far. And it tastes just as good with dried bay leaves and rosmary than with the fresh ones. So, Bravo, Gennaro!

My husband is a huge Italian pasta fan I discovered this recipe and sent it to him. Of course, we made this Bolognese immediately. This is one of the BEST Bolognese recipes we have found. It is now part of our regular dishes. I keep everything in the house stocked at all times. If you haven't yet tried this beautiful recipe do so immediately, you won't be sorry.
