Comment section is bananas. Listen folks, the title clearly says "quick" method of making injera. She's using the beer to substitute the 2-3 days fermentation process. Seriously, calm down. She's not "insulting" anyone with a alternate recipe. If you want to know how to make traditional injera there are plenty of other videos to watch. So rude.

It appears by my estimation that she’s using approx 4 cups of flour. So, use whatever you want. A 50/50 mix of white flour and Teff, or whatever blend works for your taste. Pay attention to the consistency of the mix. If you’ve made injera before, you know the right consistency. The alcohol burns off mostly during cooking, so no one is “getting drunk” here. I wouldn’t worry about adding other leavening ingredients because the beer adds the necessary yeast.
There are plenty of eyes in this injera, and just because it’s different than your family makes doesn’t mean it’s wrong. The pan she’s using is called a griddle.

The aim of the video is amazing, a short solution to prepare injera in a reasonable time. My great disappointment is that if you want to show a recipe, you should provide ingredients quantities otherwise is impossible

This is a QUICK and EASY method. The title alone should tell people that this is NOT the traditional way to make it. The traditional way is NOT quick; it takes 2-3 days for the yeast-ed batter to ferment, for one thing. And after about a minute, you cover it in the pan to steam-cook it. I have some sitting now, that should be ready to cook in a couple of days.

I commend everyone who actual read the title and used their brains to realize this is a substitute for making traditional injera. Traditional injera takes 1 - 3 days to fully make. The title says quick and easy injera, meaning there are going to be some substitutions in this recipe to make it "quick and simple".

Hi, thank you for the lovely recipe.  I have known several restaurant owners who used a small amount of beer to help the injera rise.  A lot of people do not realize that in America, the Injera does not come out quite like it does in Ethiopia, so sometimes you have to make changes and substitutions.  Beer is made with yeast, and so it helps to make it rise and be lighter.  Thank you for your recipe.  The injera looked lovely.  I hope you will create more recipes from Ethiopia.

Just came across this tutorial on quick and easy Injera. So, those are the only ingredients needed??? WOW. No yeast, no baking powder or salt?? I'm totally blown away. I LOVE Injera bread and can't wait to try. I was curious about that package you set aside. What is in there? Just white flour?

I respect traditions but this is my 3rd video I've watched on making injera and I find it very interesting you are using beer to make it.. I'm trying to make kombucha from scratch by using dried flakes from my sourdough starter dowsed in the tea, sugar solution, and combining methods to make richer yeasts. So I'd like to compliment you on this method even if it's not traditionally Ethiopian.

I just dined at an ethiopian restaurant in Vancouver. Loved the injera. What does the kind of leavening matter? Yeast, toddy, beer! If it works, fine. I'm willing to try making it because I liked it at the restaurant. By the way, when alcohol is cooked in foods i.e. wine, beer, rum etc., the alcoholic content lessens. Studies show that it doesn't completely evaporate but almost depending on how long it's cooked. So no worries there. What I really want to know is what kind of flour is used? I have read so many comments here - the question has been asked over and over but never answered. I think the flour will make or break this recipe. Please let us know.

You can also put the batter through a sieve to eliminate lumps. Great recipe!
