A lot of what we’re going to talk about today comes from research on the Blue Zones. Communities around the world where residents are much more likely to live to 100.
What they share is diets rich in fruits, vegetables and whole foods that are nutrient dense and full of fibre. They ate few processed foods, refined anything, especially sugars and starches. And little dairy or meat.
Every Blue Zone diet was almost all plants. Leafy greens were really important. So were beans. Beans are richer in nutrients per gram than just about any other food. Plus, they’re cheap and versatile.
For snacks, Blue Zoners ate nuts. They’re full of nutrients and they help reduce bad cholesterol. Studies show nut eaters out live non-nut eaters by two to three years.
