This is unfortunately too true, every time I pass by the Eiffel Tower or any other tourist attraction, they are EVERYWHERE... And every time I see tourists getting scammed and then realizing what happened, it's honestly disgusting and the fact that there's no police patrolling the area to chase them away is beyond me

Haha I scammed the scammers on this in Montmartre, Paris. A drug addict from the streets told me how to scam them. He said walk up to play but have a 20 euro note and some 50's underneath so he can see, he said act like your not sure you want to play look at your money then the cups your money etc till he entices you in. Then pretend your not sure whether you bet 20 or 50 then bet the 20, he said he will let you win the 20 hoping you will bet the 50's after which I did and won 20 euro. Then when I didn't bet the man again he got really angry and even started demanding the money back, the drug addict signalled to me I should leave quickly so I did, he asked for 10 euro after which I gave him

As a French person, a piece of advice: pretty much anyone approaching you in touristic areas or trying to attract your attention (like with games like this one) is trying to scam you & distract you while the other pickpockets you. Just ignore them or say "non merci" without looking at them

If some fuss starts somewhere and everyone is looking, watch out for pickpockets too, it's a distraction. In the metro try to have all your stuff, bags etc, in front of you, not on your side or back, there are lots of young kids pickpocketing tourists.

If you're American, don't talk too loud or make yourself noticeable because Americans are seen as rich, naive and easy to steal from.

If you are or look East Asian, be even more careful because unfortunately Chinese & Japanese tourists are specifically targeted by thieves due to often being confused and unfamiliar with French culture & how things go.

As long as you don't over-idealize Paris, don't act stupid, and follow the above advice you'll be fine

EDIT: Really the main trick, no matter where you're from, is to look as much as possible like a local (dress normally, dont walk too slow, do the "bitch face" like a commenter wrote, look like you know where you're going) and not like the typical wide-eyed tourist amazed/confused by everything around them. That applies pretty much to any major touristic place I guess
