If you crack the eggs thoroughly before adding to the ice bath, it allows the ice water to seep in between the shell/membrane and the cooked egg inside, allowing for even easier peeling

Water is at a full boil at 200* at an elevation of 6500ft., sea level is 212*, adjust cook time accordingly

Put the eggs in cold water. Bring to a gentile boil, using highest heat setting. Boil *exactly* 3 minutes. Remove from heat. Let stand, in hot water for 10 minutes.

(Test for doneness by spinning. If it spins, like a top, it’s done. If it’s not done, let it sit in the hot water longer. It will not overcook.)

Pour off all but 1” of the water. Cover and break the shells against the sides of the pot, by shaking. Pour off remaining hot water. Cover with cold water. When cool enough to handle, peel under cold running water.

I’ve done this with; gas, electric, and glass-top, ranges, for over 40 years. The only time I’ve had a problem is, if the eggs are “too fresh”. A fresh egg hasn’t had time to develop the air sac, at its base, and will be hard to peel no matter what method you use.

Don't bother with ice, just dump out the hot water and add cold water over in the same pot.

So wrong... It's the age of the egg that matters. The albumen of a new/freshly-layed egg is more acidic than in older eggs (7 to 10 days old) and that's what causes the egg skin to adhere to the inside of the shell... The acidity causes chemical binding of albumen to calcium. As the egg ages, and as CO2 is released from the albumen, it becomes more alkaline and doesn't stick to the inside of the shell. Period. So if you follow the instructions in this video for a day 1 egg, it will not work. Those that have had success with her method are simply performing an unnecessary process to an older egg that wouldn't have the sticky eggshell issue. Science, not youtube ratings.
