Grease is flavor, but there is a point where it’s just a hindrance to the dish in its entirety. I still want to taste the sauce I spent so much time making to taste like tomatoes. I still want to taste the pasta. I dont need 5 ounces of grease to make my food taste good.

That's mostly water in the pan. But you're correct in browning than first for color and the maillard reaction.

It’s sea of flavor and you want all that vitamins, iron etc from the meat juices to be in the sauce. Back to cooking school lady.
