It's basically karaage (japanese fried chicken) with water added instead of just coating in the starch. Gonna have to try this, it looks delicious.

The funniest thing i find in this video is the fact that he actually made a more authentic sweet and sour chicken than literally Every western food content creators have made. The only thing he's missing is garlic in the sauce and that's it. Soy sauce is a personal addition but i dig it 👍🏻
