*Cupcakes ingredients:*

Carrot 130g
Egg 1pc
Vegetable oil 120g
Sour cream 15g
Sugar 100g
Flour 150 g
Walnut 40g
Baking powder 1/2 +1/4 tsp
Baking soda 1/4 tsp
Cinnamon 1/4 tsp
Salt 1/4 tsp

*Salted caramel ingredients:*

Sugar 120g
Butter 50g
Heavy Cream (35%) 80g
Salt 1/4 tsp

*Cream cheese frosting ingredients:*

Cream cheese 200g
Heavy cream (35%) 100g
Powdered sugar 60g

_Make the cupcakes_

1.Grate fresh carrots on a coarse grater, add an egg, sugar, flavourless vegetable oil (I use sunflower oil), sour cream (you can use yoghurt) and mix.

2. Sift flour with baking powder, soda, salt and cinnamon into the mixture. Mix.

3. Finely chop the walnut using a knife or chopper and add to the mixture.

4. Use a piping bag or spoon to put the batter into the molds (approximately 6 large or 9 small cupcakes).

5. Bake in preheated oven at 320°F (160°C) for 30-40 minutes. Check readiness with a wooden skewer or toothpick.

6. After baking, allow the cupcakes to cool.

_Make the caramel_

*Prepare the ingredients in advance. Put the butter in the freezer, and heat the cream almost to a boil*

1.Melt sugar over medium heat, stirring constantly and breaking the lumps.

2. When the sugar becomes liquid and darkens, add the frozen butter in pieces. Stir until butter combines with melted sugar.

3. Pour in hot cream and mix. Be careful, the caramel will rage strongly.

4. Remove caramel from heat and add salt.

5. Strain into a clean bowl and refrigerate.

_Make the frosting_

*Use cold ingredients and utensils*

1. Whip cream cheese with cold cream (which has been in the refrigerator for at least 24 hours) and powdered sugar.

2. Whisk until the mass becomes dense and stable.

3. Put the frosting into a piping bag fitted with a nozzle.

_Аssembling the cupcakes_

1. Make a hole in the cupcake with a pastry nozzle or spoon.

2. Fill the hole with caramel.

3. Apply frosting to cupcakes.

4. Decorate as you wish. I topped the cupcakes with caramel and sprinkled with chopped walnuts.
