Let’s make Easy Sheet Pan Pancakes! This Healthy Breakfast Meal Prep recipe saves so much time! ☀️ Make these Sheet Pan Pancakes on Sunday, for example, and then you’ll have a ready breakfast waiting in the fridge for the week! You can heat a piece of the pancake in the microwave before serving or you can also enjoy it cold! The recipe is gluten-free, lactose-free & high-protein! Such an easy and delicious breakfast idea!😋 If you aren’t coeliac/intolerant to gluten/IBS sufferer, you can of course use regular flour in this. Same with lactose-free products, use only if needed. You could use low-fat Greek yogurt instead of natural yogurt for extra protein!
Easy Sheet Pan Pancakes:
4 eggs
3 cups lactose-free unsweetened natural yogurt (720 ml)
1/4 cup maple syrup or brown sugar (60 ml)
2 teaspoons vanilla extract
2 cups gluten-free flour mix (or regular flour if not coeliac/intolerant/IBS sufferer) (480 ml)
2 tablespoons baking powder
Topping examples:
strawberries
blueberries
bananas
dark chocolate chips
1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Spread the mixture on a baking pan lined with parchment paper. Add your toppings (press them lightly into the batter)
4. Bake at 180 Celsius degrees (350 in Fahrenheit) for about 30-40 minutes. Serve with Greek yogurt, berries and maple syrup, for example!
5. Store in the fridge!
