Sesame Chicken - Better than TAKEOUT

INGREDIENTS:
Marinate the chicken:
* 450g of chicken thigh, boneless and skinless
* 1 tsp of chicken powder
* 1 tsp of Yum Yum
* 1/2 tsp of salt
* 1/2 tsp of sugar
* 1/2 tsp of five spice powder
* A pinch of white pepper

Sesame Chicken Sauce Ingredients:
* 1 tbsp of oyster sauce
* 1 tbsp of soy sauce
* 2 tbsp of rice vinegar
* 2 tbsp of brown sugar
* 1/2 tsp of chicken powder
* 1/2 tbsp of potato starch
* 3 tbsp of water
* 1/2 tbsp of sesame oil
* 1/2 tbsp of sesame seeds

Wet Batter:
* 1/2 cup cornstarch
* 1 cup Self raising
* 1.5 cup of cold water

vegetable/ canola oil for deep frying

Steps:
1. Slice chicken thigh into 1” cubes and marinade the chicken with chicken powder, Yum Yum, salt, sugar, five spice powder and white pepper for 20 minutes. Set aside
2. Then, transfer the chicken to the “Wet batter” and mix until it is evenly coated.
3. Heat the oil into high heat. Fry the chicken at 350F for 2 minutes until it is lightly golden. Then, fry the chicken for a second time at 380F for 3 minutes until golden and crispy. Set aside.
4. In a separate bowl, combine oyster sauce, soy sauce, rice vinegar, brown sugar, chicken powder, corn starch, water, sesame oil and sesame seeds.
5. Pour the sauce to the wok/pan and stir the sauce until it has thickened. Add your chicken back to the wok and toss the chicken until it is evenly coated.
6. Once it is done, garnish with spring onions and enjoy!
